Fluffy Paleo Homemade Marshmallows (Honey-Sweetened & Simple to Make)
A naturally sweetened treat made with just a few wholesome ingredients.
Homemade marshmallows might sound complicated, but they’re surprisingly simple to make—and much better for you than the store-bought versions. These paleo-friendly marshmallows use just three main ingredients: grass-fed gelatin, honey, and vanilla. The result is a light, fluffy, and naturally sweetened treat that’s perfect for s’mores, hot drinks, or a snack on its own.

Paleo Homemade Marshmallows Recipe
Ingredients:
½ cup water, divided
1 tbsp grass-fed gelatin powder (such as Vital Proteins or Great Lakes)
½ cup raw honey
1 tsp pure vanilla extract
Optional: a pinch of sea salt
Instructions:
Prepare the Pan
Line an 8x8 pan (or something similar) with parchment paper and lightly grease it with coconut oil.Bloom the Gelatin
Add ¼ cup of water to a large mixing bowl (or the bowl of a stand mixer) and sprinkle the gelatin over the top. Let it sit for about 5-10 minutes to "bloom," forming a thick, spongy texture.Heat the Honey
In a small saucepan, combine the honey and the remaining ¼ cup of water. Heat over medium heat, stirring occasionally. Once it starts bubbling, lower the heat and simmer gently for 2-3 minutes to thicken slightly.Combine and Whip
With the mixer on low speed, slowly pour the hot honey mixture into the bloomed gelatin. Gradually increase the speed to high and whip for 7-10 minutes. Add the vanilla extract and optional pinch of sea salt as the mixture thickens. It should look glossy, white, and fluffy when done.Pour and Set
Pour the mixture into your prepared pan, spreading it evenly. Let it sit at room temperature for 4-6 hours, or until completely set.Cut into Marshmallows
Once firm, lift the marshmallow slab from the pan using the parchment paper. Lightly oil a knife or scissors to cut the marshmallow into squares. Toss the pieces in arrowroot starch or coconut flour if you want to prevent sticking.
